Banana Bread w/ Apple Sauce












Yield: 2 loaves.

Ingredients:
2-2/3 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2/3 cup butter, softened at room temperature
1-1/3 cup sugar
2 eggs
1-1/2 cups mashed very riped bananas
1/2 cup apple sauce
1/2 tsp vanilla
1 cup chopped nuts (optional)

Directions:
Preheat oven to 350F. Grease and flour two loaf pans. Sift together flour, baking powder, baking soda, and salt. Set aside.

Cream butter and sugar until light. Add eggs, mixing well after each.

Add mashed bananas. Add the flour mixture in thirds, alternately with the apple sauce. Blend quickly but thoroughly. Stir in the nuts.

Pour into prepared pans and bake 45 minutes or until the center tests done.
