Strawberry Crepe w/ Chantilly Cream

Chantilly cream, although sounds like a fancy thing to make, is basically just whipped cream flavored with sugar and vanilla.

Ingredients:
1 basic crepe recipe
1 cup cut strawberries
2/3 cup heavy whipping cream
2 tsp vanilla
1/3 cup sugar (or more for sweeter cream)

Directions:
Follow the recipe.

Whip cream, sugar, and vanilla until soft peaks formed. This is called chantilly cream :)

Serve crepes filled with strawberries and cream. Drizzled with chocolate sauce if you like it.

Pear Crepe w/ Chocolate Sauce

Ingredients:
1 basic crepe recipe
2 medium pears, peeled and sliced
5 cloves
3 tbsp raisin
2 tbsp sugar
a pinch of allspice

Directions:
Follow the basic crepe recipe.

Bring a pan of water to a boil. Add sliced pears, cloves, raisin, sugar, and allspice. Reduce the heat and simmer for 5 minutes. Remove from heat, discard the cloves, and let cool a little.

Fill crepes with sliced pears. Broil in the oven for 5 minutes.



Chocolate Sauce
Ingredients:
4 oz dark chocolate
2 tbsp butter
1 tsp vanilla
5 tbsp milk

Directions:
Heat all ingredients on top of a double boiler, stir occasionally. Remove from heat when all the chocolate has melted. Drizzle onto crepes right before serving.

French Toast


Bahan:
4 lembar roti tawar yang whole wheat
3 butir telur, kocok
1/2 cup susu cair
1/4 cup gula pasir
sejumput garam
1 sdt vanilla
1/2 sdt cinnamon bubuk
mentega sedikit

Cara memasak:
-Campur telur, susu, gula, garam, vanilla, dan cinnamon; aduk rata
-Panaskan mentega di pan
-Celupkan masing2 roti selama 2-3 menit sampai terendam rata
-Masak di api sedang hingga kecoklatan; tiap sisi kira2 3 menit

Untuk 2-3 orang

French Madeleine

This is a french cookie/cake usually for tea/coffee time companion. Baked in special molds shaped like seashells, madeleine is best enjoyed freshly baked. However, stored in an airtight container, it will stay moist up to 10 days. This is a fail-proof recipe. Enjoy :)

Makes 60 pieces

Ingredients:
4 eggs
1 2/3 cup sugar
1 3/4 cup sifted cake flour
1 1/3 cup melted butter
1 tsp vanilla paste
2 tbsp lemon juice
rind from 1 lemon

Directions:
Preheat oven to 375F. Grease and sprinkle with flour several madeleine molds.

On top of a double-boiler, whisk continuosly eggs and sugar until luke warm. Remove from heat, beat with an electric mixer until cooled and tripled in volume.

Add lemon juice, lemon rind, and vanilla, stir slowly. Add sifted cake flour and melted butter alternately; fold in evenly after each addition.

Fill each mold just 3/4 full. Bake in the preheated oven for 10 minutes or until golden brown. Remove from oven, let stand in the mold for 5 minutes before trasfering onto a wire rack.


Bahan:
4 butir telur
1 2/3 cup gula pasir
1 3/4 cup tepung terigu khusus kue (cake flour)
1 1/3 cup mentega cair
kulit lemon dari 1 butir lemon, dan sedikit air perasan lemon.
1 sdt vanilla cair

Cara memasak:
-Oles cetakan dengan mentega dan taburi sedikit tepung.
-Panaskan oven 375F (200 C).
-Campur telur dan gula, masak sambil terus di kocok di atas double-boiler hingga suam2 kuku.
-Angkat dari api, kocok dengan mixer hingga dingin dan mengembang.
-Masukan kulit lemon, air lemon, dan vanilla, aduk sebentar.
-Masukan tepung dan mentega cair bergantian, aduk hingga rata.
-Isi masing2 cetakan hingga 3/4 penuh.
-Panggang di oven kira-kira 10 menit atau sampai kuning kecoklatan.
-Angkat dan hidangkan.

Basic Crepe

Serves 4

Ingredients
1 cup all purpose flour
3 eggs
1 cup milk
a pinch of salt
butter

Directions:
Combine milk and eggs together. Whisk in flour and salt. Do not over mix.

Cover with plastic wrap, let stand for 15 minutes.

Prepare and butter a crepe pan. Make crepe with the batter.


Bahan:
1 cup tepung terigu
3 butir telur
1 cup air
garam sejumput
mentega

Cara memasak:
-Campur tepung, telur, dan air, aduk rata.
-Diamkan 1/2 jam agar adonan lemas.
-Panaskan wajan crepe dan sedikit mentega dengan api sedang
-Tuang satu sendok sayur besar, putar wajan sehingga adonan menutupi seluruh permukaan wajan.
-Masak sampai muncul pori-pori, balik, masak 2-3 menit. Angkat
-Ulangi sampai habis.

Creme Brulee

Ingredients:
- 1 cup heavy cream
- 1 1/2 cup milk
- 1/2 cup sugar
- 2 whole eggs + 4 eggyolks
- 3 tbsp rum (or 1 tsp vanilla)
- a dash of cinnamon + a dash of nutmeg

Preparation:
- prepare 8 individual ramekin
- preheat the oven at 325F
- in a sauce pan, heat heavy cream, milk, sugar, cinnamon, and nutmeg until almost boiling
- strain into a bowl
- in another bowl, combine the eggs and rum, beat with a mixer
- pour the cream mixture into the eggs mixture with a steady stream, beat continuously
- divide the mixture into the ramekins
- bake using water bath technique for 25-30 minutes
- the center should still be jiggling a bit
- remove from oven and let set at room temperature, then refrigerate

Serving:
- sprinkle the top of each creme brulee with granulated sugar
- using a cooking torch, caramelized the sugar
- if you don't have a torch, put creme brulee under high broiler for 1-2 minute
- served immediately with fruits (strawberry/ blueberry/ peach/ etc)
