Coto Makassar

Ingredients:
1 kg beef for stew (cut into cubes)
1 liter rice water
1 liter fresh water
1/3 cup roasted peanut, grind until powdered
salt pepper sugar

Spices:
(10 garlic, 8 candlenuts, 1 tbsp corriander, 1 tsp anise seed)
--> make smooth paste of these 4 spices
5 lemongrasses
5 bay leaves
2 inches gingerroot
1 inches galangal

Toppings:
fried shallots, roasted peanut, green onion leaf, sweet soy sauce, limes, oat crackers (emping)

Directions:
With a little bit oil, fry all spices until fragrant.
In a big pot, combine beef, rice water, water, and fried spices.
Simmer until beef tender.
Add roasted peanut at the very end.
Serve with rice and toppings

Perfect recipe for a crockpot!


Teriyaki Chicken Meatballs w/ Bell Peppers

Ingredients:
1 packet teriyaki chicken meatball
1 green bell pepper
1 red bell pepper
1 yellow bell pepper
1 onion
1 tbsp sweet soy sauce
salt, pepper, sugar, thyme, olive oil

Direction:
Cut onion and bell peppers into strips
Heat olive oil, add onion and stir-fry until translucent
Add teriyaki meatball and stir 3-5 min.
Add bell pepper, sweet soy sauce, and spices; stir-fry until cooked



Creamy Chicken Potato Soup

Ingredients:
shredded cooked chicken or turkey
5 med yellow/ golden potatoes, cooked and mashed
2 liter chicken stock
3 tbsp butter
2 tbsp fried shallots
2 tbsp chopped parsley
salt, sugar, pepper, nutmeg, thyme

Direction:
Combine everything in a soup pot and let simmer

Apricot Mustard BBQ Chicken

Ingredients:
6 boneless skinless chicken thighs
2 tbsp apricot jam
1 tbsp Dijon mustard
salt and pepper

Direction:
Sprinkle chicken thigh with salt and pepper, set aside.
Combine apricot jam and mustard in a bowl.
Marinade chicken with the sauce for at least 30 min.
Grill until done.



Biji Salak (Sweet Potato Dumpling)

Ingredients:
500 gr peeled sweet potato
50 gr tapioca flour + more if necessary
1 cup brown sugar + 2 liter water + 2 pandan leaves
1 can coconut milk + 1/3 cup water + a pinch of salt 

Direction:
Peel, cut, and steam sweet potato until soft.

Meanwhile, heat up coconut milk, water, and salt in a sauce pan. Keep stirring the coconut milk until it's steaming but not boiling. Remove from heat and let cool.

When the potato is done, mash until smooth and let sit until no longer steaming.
Add tapioca flour gradually, mix well. Add more flour as necessary if the batter is too wet and sticky.
The right consistency is when you make little balls they won't stick too much on your hands.

Prepare a bigger pot, add water, brown sugar, and pandan leaf, let it boil.
Drop the sweet potato dumpling into the boiling syrup. Do not make the balls too big, it will expand.
Repeat until finish.

Ready to be served :)

Real Simple Panettone Bread Pudding

Ingredients:
1 loaf panettone bread, cubed
4 eggs
4 cups whole milk
1 tsp vanilla paste
1/2 cup sugar
butter to coat the dish

Directions:
Butter the bottom and side of a 9x9 baking dish.
Spread the cubed bread evenly.
Combine eggs, milk, sugar, and vanilla paste in a separate bowl; mix well.
Pour the egg batter over the cubed bread. Let sit for 30 min.
Preheat oven to 350F.
Baked pudding mixture for 40-45 min.

Semur Ayam Kentang w/ Slow Cooker

Bahan:
6 paha ayam bertulang
1/3 cup kecap manis
2 buah kentang, potong2
1 buah tomat
1 siung bawang merah jumbo, iris2, goreng sebentar
2 siung bawang putih, iris2, goreng sebentar
2 lembar daun jeruk purut
1/3 cup santan kental
garam, gula, merica, kayu manis secukupnya
air secukupnya hingga ayam terendam

Cara memasak:
Masukan semua bahan ke dalam slow cooker.
Masak low 7-8 jam atau high 4-5 jam.
Hidangkan hangat2.

Chocolate Pomander Balls



Ingredients:
1 cup chocolate chips
1/2 cup sugar
1/4 cup light corn syrup
1/4 cup water
1 teaspoon orange flavoring
2 1/2 cups crushed vanilla wafers
1 cup crushed walnuts
1 (1.75 ounce) package multicolored candy sprinkles


Directions
Combine chocolate chips, sugar, corn syrup, and water in a glass or metal bowl. Place bowl over a pot of simmering water to melt chocolate chips, stirring occasionally. Once the chips are melted, stir in orange flavoring to the mixture and remove from heat.
Meanwhile, mix together the vanilla wafers and walnuts in a bowl; set aside. Pour the chocolate mixture into the bowl; mix until evenly coated. Shape the mixture into small balls; decorate with the candy sprinkles.
