Snow White Cookies
Makes about 6 dozen cookies.
1 1/4 cup unsalted cold butter, cut into tiny cubes
1 cup powdered sugar
1 1/2 cup crushed powdered cashew
2 cup all purpose flour
1 tsp vanilla paste
Enough powdered sugar for coating.
Mix butter and sugar together for about 3 min with a mixer.
Add vanilla paste. Add cashew and flour alternatively. Blend using spatula or wooden spoon.
Divide dough into two part. Wrap each with a plastic wrapper. Cool in the fridge for 1/2 to 1 hour.
Preheat oven to 325 F. Position rack in the middle of oven.
Hand shape cookies to look like cashew or roll and cut with cutters.
Arrange on the cookie sheet.
Bake for 20 min.
Remove from oven. After about 2 min, roll each cookie into powdered sugar. Let cool on the cooling rack.
After cookies cool completely, roll again into powdered sugar.
Store in airtight containers.
