Grilled Lemongrass Chicken ( Ayam Panggang Sereh )

Ingredients:
1lb chicken drum stick
2 lemongrass, cut medium size
2 kaffir lime leaves
1/4 cup minced shallot
2 tbsp minced garlic
1/2 cup sweet soy sauce
1 tsp black pepper
1 green chillies, chopped
1 tbsp lime juice
2 tbsp olive oil

Directions:
Saute minced shallot and minced garlic with 2 tbsp olive oil. Add lemongrass, kaffir lime leaves, and 1/8 cup water. Add chicken, black pepper, chillies, and soy sauce. Cook until the meat turns opaque.

Transfer to a baking dish, pour the sauce on top. Marinate chicken for 15 minutes.

Grill for 15-20 minute. If using oven, broil at 400F for 10-15 minutes. Squish lime juice just before serving.
