Chocolate Butter Cookies ( Kue Semprit Coklat )



Makes about 40 cookies.

Ingredients:
2/3 cup (8 1/2 tbsp) unsalted butter, softened
1 cup less confectioner sugar
1 egg yolk
2 oz melted dark chocolate
1/2 tsp vanilla
1 cup cake flour
1/2 cup unsweetened cocoa powder
1/4 cup milk powder
1 tsp baking powder

Directions:
Preheat oven to 325F. Line two baking sheets with parchment paper. Sift flour, cocoa powder, and baking soda into a small bowl.

Beat butter and sugar until fluffy. Add melted chocolate, egg yolk, and vanilla; beat lightly. Sift flour mixture into the batter, fold in evenly.

Using a medium star decorating tips, squish about 2 inches wide cookies onto baking sheet. Bake in the preheated oven for 18 - 20 minutes. Turn off the oven, let the cookies sit for another 5 minutes. Transfer to wire racks to cool before storing in an airtight container.

Note:
Substitute 1/4 cup cake flour with 1/4 cornstach if you like softer cookies.
