The Bride's Salad ( Selada Pengantin )


Served with other Indonesian dishes such as chicken soto, chicken satay, spicy fried eggs, and jasmine white rice, this salad is often served at wedding receptions.

Ingredients I (Vegetables):
Chopped lettuce
Diced pineapple
Sliced cucumber
Diced apple (optional)
Fried tofu
4 eggs, boiled and sliced
Melinjo nut chips (emping) or potato chips

Directions:
Mix all ingredients in a salad bowl, set aside.


Ingredients II (Sour Peanut Sauce):
2 tbsp peanut butter
1 tsp minced garlic
1/4 cup lime juice (or substitute with 2 tbsp vinegar)
1/4 cup pineapple juice
1/2 tsp chili paste or more if you like it to be more spicy
2 tbsp dark brown sugar + more to adjust the flavor
enough water

Directions:
Saute minced garlic with a tbsp olive oil. Add chili paste and lime juice. Stir well.

Add peanut butter, pineapple juice, brown sugar, stir until well combined. Add water if its too thick. Adjust the flavor. It should taste sweet, sour, and spicy.

Drizzle onto salad just before serving.
